“Who are you?”
“W-Will Graham.” Will tells him, eyes still wide in disbelief, hand still pressed trembling to his bleeding face.
The name elicits nothing in Hannibal, he doesn’t relax, he doesn’t sigh, no wrinkles form at the corners of his eyes, soft enough to kiss.
Nothing.
“You don’t know me,” Will murmurs, fear and realization culminating in a dizzying peak.
After the fall, Hannibal doesn't remember.

“Great.” Will snorted, blinking spots away. “I still know my name at least.” Would it have been freeing? If he had forgotten it? Started over entirely anew?
“Tell me, Will,” The man pulled back and stared at him very intently. His eyes were dark whirlpools of anguish. “Do you know mine?”
Will reached into his memory. The man definitely seemed familiar. Deja Vu personified. “I’m sorry,” He said again, “I don’t.”

Summary
After avoiding capture in Baltimore, Hannibal escapes to Europe with Bedelia. However, their relationship is less than ideal, so he's easily swayed by the attention of a man who just so happens to look exactly like the man that broke his heart back in the States.
Waking up after almost dying, Will realizes that he won't be able to move on with his life without seeing Hannibal at least one more time. He has questions that need answers, so he will cross oceans to find the man who left him behind. However, when he finds Hannibal, it seems he's moved on with someone who looks strangely familiar.
(Or, instead of killing Antony, Hannibal starts a fling with him while in Florence in an attempt to move on from Will. It doesn't work, especially when Will suddenly shows up in Italy looking for him. Diverging from Antony's death S3E1.)

Summary
"Do you have a problem?" The chef asked before tacking on a "sir" as an afterthought. How rude.
"Yes." Hannibal brought forth the plate of grey sludge. "I ordered runny eggs, these look like and are the consistency of wet painted concrete.
"Are the eggs runny?"
"A little," Hannibal admitted. "But it is more like—"
"Then they are runny eggs." The rude man interrupted. "Look, I'm rather busy. Eat the eggs, don't eat the eggs, just get out of my kitchen." And with that, the chef turned back to the stove.
Hannibal stood there gobsmacked. The nerve of the man! If he didn't look like a Botticelli come to life, he would be on the menu for Hannibal's next dinner party.
Whatever interest Hannibal had in the man didn't extend so far as letting him off the hook completely.
"I really must insist you remake my dish, the eggs are quite inedible."
"You... insist?" The chef turned around from the stove once more, wielding his metal spatula as menacingly as a spatula could be wielded.
"I do."
