Soulmates exist to make the world a little easier, a life a little meaning. From a point when kids are young, they switch bodies with their soulmates, some say because the spirits of above wanted to make their life a little easier in finding and knowing each other, others say as a sick joke. Sokka always grew up excited for when he'd finally meet his very own soulmate, and Zuko grew up learning to fear his, so when put together during a time of war on opposite sides, its a recipe for mutual hatred, fear, and maybe a little bit more.

In a perfect world Lance and Keith wouldn't have to hide how they felt about each other (and Lance could leave as many hickeys on Keith as he wanted).
